Cheese Factory Caxigon

Caxigon Cheese Factory in Berodia de Cabrales, it is the first and only artisanal cheese factory in the council of Cabrales outside the DOP that makes cheese with pasteurized milk.
They are successors of a saga of family tradition, whose beginnings date back to the 1950s.
Ms Eugenia de Pedro has spent her entire life related to the world of cheese. At the age of five, she was already accompanying her father, Juan "the cheese maker of Berodia", to the markets of the entire eastern region of Asturias. In 1992, Ms Eugenia and her family decided to start a new cheese factory to manufacture soft white cheese that goes on the market under the name
CAXIGON CHEESE, one of the few cheeses made in CABRALES, which is not blue cheese.

The one made with sheep's milk and the one made with goat's milk are two products to take into account when choosing
among the many good cheeses that are made in the Principality of Asturias.

They make fresh, semi-cured and cured cheeses from cow, goat, sheep and blend milk matured in a natural cave.
